A Premium session, yes: stop part-way and the attempt is held for you, standing where you left it. A demo attempt, no. What does not wait is the clock, because a resumed Premium session starts its whole allowance again rather than the time you had left, and that is what stops an interrupted sitting telling you anything about pacing.
Two different things get called pausing, and they behave differently here. One is stopping a networking exam session and coming back to it another day. The other is going back to an item inside a session you are still sitting. Both are possible, and only the first depends on which tier you are on.
What a Premium Session Holds When You Leave It
The answers you have already given. Return to the same exam and the attempt is taken up rather than replaced: you arrive at the first item you had not answered, everything behind it is still recorded, and the sitting continues as one attempt rather than becoming two. That holds for both Premium lengths, the full-length session and the mini. It does not hold indefinitely, though. An unfinished attempt is kept for a few days and then cleared, so it is a reprieve after an interruption rather than a bookmark you can leave open for a fortnight.
